The Apple Country Spirits Crew
As the first post, I thought it might be a good idea to introduce the crew behind Apple Country Spirits and Tree Vodka. This project has been in development for several years now, and is finally coming to completion. The mastermind of this operation is David DeFisher and I, your friendly neighborhood distiller, am Collin McConville.
David DeFisher is the fourth generation of his family to own and run DeFisher Fruit Farms. His family has grown apples in Williamson since the 1800's. Since taking the reigns from his father Bill, in the 1990's, Dave has expanded the farm to 600 acres, diversified crops and modernized facilities. The distillery is the next step in that modernization process, and will take advantage of all of the crops that are grown on the farm; from apples, plums, peaches and pears to pluots, raspberries and cherries.
I (Collin) am a transplant from the Hudson Valley of New York (Upper Hudson, near the Capital District). I was born and raised in that area, though went to college in Western New York, at Niagara University. When I left college there was very little for a history major to do, so I got a job at an upstart distillery, and one of the first farm distilleries in the state, working in the tasting room. I spent five years at that distillery and moved my way up from tasting room operator to sales rep and on to assistant distiller. Once I got a taste of distilling (and what came out of the still) I was hooked and have since spent a lot of time reading books on old techniques and discussing the process with as many people as I can, both in the spirits industry and those in wine and beer as well.
I will attempt to post on here as often as possible to keep everyone up to date on the happenings at the distillery, and will occasionally pepper in factoids and fun things as well. Maybe we will even run a couple promotions through the blog here, so check back often.
